Traveling to Mexico

Whats up guys!
I just got back from a recent trip to Mexico and let me tell you is was awesome! I had so much fun with the culture and being around all the different people. I also had an awesome time building a church that is now affiliated with one of the orphanages in the area. I went to Rosarito Mexico.
Ok so I probably wouldn't recommend eating Mexican Street food but there is this one vender that the sold tacos there. The family I was staying with told us that he was a safe and clean vender so I went for it.
OH MY GOSH I ordered 2 shrimp tacos they were the most amazing thing i"ve ever Had in my life. The BEST taco ever. I may just drive to Mexico later on this summer just for a freakin' taco. I'll never forget that meal.
Between the church building and the tacos sent from God probably to thank me for helping with the church it was a wonderful trip!

The Chimney method

Hey Guys!

I'm going to post one more post about grilling beef before I get back to traveling because i told you all that i was going to fill you guys in on the secret of char broiling your own steak house quality cut of beef. Unless you have the luxury of having a $3200 broiler at your disposal you can easily make your own and I'll show you how.
Step one: you need a charcoal chimney, its the one you preheat your charcoal with. You will also need a brick and metal pie pan.
Step two: heat a bunch of charcoal. Place your brick on the ground outside and your pie pan on the brick. Then place your steak on the pan and the chimney over the steak and there you go, you have your very own char broiler. The temperature on the steak will reach around 700 degrees F if you do this right.
I hope you all enjoy! By The way this is only going to take a min or less on each side. Its very easy to burn your steak this way so be careful!
Next post will be about a trip somewhere. No more cooking for a while :)

BEEF - its whats for dinner

Good morning everyone.
So I've had a lot of questions about grilling a good steak and what all needs to happen before that can actually take place. I raise my own beef they are free of steroids and 100% grass feed. We have a local butcher in our town that will hang and cure the beef for about 3 weeks. 4 weeks minimum would really be best but the butcher usually runs out of room and needs to turn out the beef.

So back to the Steak! I usually have my butcher cut my steak at least 1 ans 1/2 inches thick. Any thinner than that and you'll just have to flip the dang thing 2 seconds after you put it on the grill. Pick your dry rub or marinade and let in set out till the meat reaches room temperature (this is important)! Heat your grill, charcoal people, if your using gas you can kindly leave this blog now :). 300-400 degrees is what youre looking for before your load the meet. Grill to MR and no more! A really important point that a lot of people have a hard time with due to patience is allowing the proper 10 min for your cut of freshly grilled beef to rest! LET YOUR BEEF REST! It will be so worth it! Another great way to Char Broil a Steak with the chimney method which i will discuss in another posting.

My Introduction

Hey everyone!
My name is Brennan. I live in California with my family and enjoy all sorts of outdoor activities like biking hiking swimming and camping. If its outside you know i'm going to be doing it! I graduated with a degree in chemistry recently and just got accepted into a doctorate program in southern California. I am so excited to go through the experience of med school and someday be in the position of helping people with any health related issues that they may have. Currently I am taking a gap year and relaxing before the craze of school starts up again.

I'm really looking forward to relaxing and enjoying life during this year. I plan on doing a little bit of traveling too. I have family down south so I want to take off for a few weeks and check out the area better seeing as that's where I'll be living for the next 5 years and maybe even longer. I also really like the idea of doing to China. I think I may take a trip there late this summer and maybe spend up to a month just checking out the country.  I really want to explore Japan while I'm over there. I think those older cultures offer so much in terms of their history. Also their way of life is so different from our western day to day lives you can really learn a lot if you choose to.

On my way home I may also stop by HI and surf for a few weeks then just catch a flight back to the states from there. Its been a while since I've done any surfing and I really want to get back into is especially if I'm going to be living down south while I'm school.
